Your new favorite Light Roast is here! I have been in search of Thailand coffee for nearly a decade now, and I’m so happy to finally be able to bring this delicious brew to you! I roast these beans using the Delicate recipe that I created for Natural and Honey Process coffees. This low-and-slow approach highlights light caramel aromas and flavors up front, backed up by chocolate for an incredibly smooth mouthfeel. A surprisingly tannic finish, like black tea, only further highlights a delightful lingering caramel flavor. Adding sugar brings out the natural grapefruit sweetness and milk/alt-milk makes it smoother, like a Milk Tea.
A fun fact about this coffee is that it’s a blend of three varietals: Catuai & Typica which are more commonly found, and Chiang Mai, which was specifically developed for its genetics to succeed in that region, much like our beloved Cascade hops here in the PNW.
