Moose

Roast Level in CAPS:

White Coffee - Light Roast - Medium - DARK MEDIUM - Espresso

Extended Fermentation!

This coffee undergoes an extended fermentation process, much like what is used in natural wine production. The starter culture is wild fermented with indigenous yeasts, bacteria, and fungi that come into contact with the coffee cherries.

The Huatusco region of Veracruz, Mexico is an ideal place to grow coffee, but requires a unique, natural process. In Huatusco, like a Spring night in western Oregon, no matter how warm the day seems to be, it gets cold and rainy at night. Ripe coffee cherries are picked in the morning and delivered to the Wet Mill during the afternoon and evening, then de-pulped and fermented for an average of 15 - 20 hours!
